A little history

In the 1900s, the first cheese ripeners appeared, collecting cheeses from farms and, thanks in particular to means of transport and the installation of the Paris/Nevers railway line, covering the markets of the capital.

Crottin de Chavignol takes its name from the Berrichon word ‘crot’, meaning ‘hole’.

This was the name given to places on the banks of rivers where women washed their clothes. The clay soil that lined these ‘crots’ was used by farmers to make oil lamps and then cheese moulds for draining the curds. ‘Crot’ is said to have given rise to “Crottin”, the container giving its name to the contents.

And Chavignol is the name of a small hamlet near the town of Sancerre located in the hollow of the piton.

Crottin de Chavignol or Chavignol has had an Appellation d'Origine Contrôlée since 1976 and an Appellation d'Origine Protégée since 1996. The Protected Designation of Origin is the European equivalent of the Appellation d'Origine Contrôlée, which is a national recognition.
